  • 1 cup pumpkin puree

  • 1/4 cup honey or maple syrup (or brown sugar)

  • 1/4 cup coconut oil, melted

  • 1/4 cup shredded coconut (unsweetened)

  • 1/2 cup coconut milk (or dairy, almond, or oat)

  • 2 eggs

  • 1 tsp vanilla

  • Optional: 1/2 cup chopped walnuts or raisins for added texture


Instructions:


  1. Preheat your oven to 400°F and line a muffin tin with liners or grease it with coconut oil.

  2. In a large bowl, mix, using a whisk, the rolled oats, flour, flaxseed, baking powder, baking soda, pumpkin pie spice, salt and shredded coconut


  3. In another bowl, whisk together the pumpkin puree, honey or maple syrup/sugar, melted coconut oil, milk, vanilla and eggs until well combined.


  4. Pour the dry ingredients into the wet ingredients slowly adding a little at a time and mix until just combined. If desired, fold in walnuts or raisins.



  5. Divide the batter evenly among the muffin tins, filling each cup about 2/3 full.


  6. Bake for 5 minutes at 400° then drop the temperature to 350° and bake for 20-25 minutes or until a toothpick inserted in the center or two muffins comes out clean.


  7. Let cool before enjoying.
